Reduced-Fat Pie Pastry (see page recipe)
7 1/4 teaspoons Equal measure or 24 packets EQUAL sweetener or 1 cup EQUAL Spoonful
2 cups mashed cooked sweet potatoes (about 2 lb)
1 (12-ounce) can evaporated milk, skim
2 eggs, lightly beaten
1 tablespoon margarine, softened
1 tablespoon all-purpose flour
1 1/2 teaspoons vanilla extract
1 1/2 to 2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/4 teaspoon ground mace (opt)
1/2 teaspoon salt
1. Roll pastry on floured surface into circle 1 inch larger than inverted 9-inch pie pan. Ease into pan; trim and flute edge. Blend remaining ingredients in large bowl until smooth. Pour into pastry shell.
2. Bake in preheated 425°F oven 20 minutes; reduce heat to 350°F and bake until filling is set and sharp knife inserted near center comes out clean, 30 to 35 minutes. Cool completely on wire rack; refrigerate until serving time.
