1. Peel, quarter core and dice pears. Combine pears with thawed concentrate and lemon juice in medium saucepan. Bring to simmer. Cook uncovered, over medium-low heat until pears are soft, about 20 minutes.
2. Remove saucepan from heat stir in extract. Pour into container to cool. Refrigerate until cold.
3. Scoop 1/2 cup (4-oz) ice cream into each dessert bowl or cup. Spoon 1/3 cup pear mixture over ice cream. Garnish with mint.
