2 cups GRAINFIELD'S Multi-Grain flakes
1 1/4 cups skim milk
1 cup whole wheat flour or all-purpose flour
2 1/2 teaspoons low sodium baking powder
1/2 teaspoon nutmeg (optional)
1/2 cup chopped apples
1/2 cup raisins
2 egg whites, slightly beaten
3 tablespoons vegetable oil
1/4 cup honey or equivalent sugar substitute
2 teaspoons vanilla extract
Mix Multi-Grain and skim milk
1. Let stand 5 minutes. Blend flour, baking powder, and nutmeg into cereal mixture. Set aside.
2. In small bowl, with a wire whisk, stir egg whites, oil, honey, and vanilla until well blended and frothy. Stir into cereal/flour mixture until moistened. Stir in apples and raisins.
3. Heat oven to 400°F. Line 12 medium muffin cups with paper baking cups. Fill 2/3 full. Bake 15 to 20 minutes, or until golden brown.
