1 cup skim milk
11 1/2 cups flour
2/3 cup honey
2 1/2 teaspoons baking powder
1 beaten egg
1/4 cup molasses
1/4 cup unsalted butter or margarine, melted and cooled
3 cups GRAINFIELD'S Low-Sodium raisin bran cereal
Soften cereal in milk. Sift dry ingredients. Stir egg, molasses, honey, and butter into softened cereal. Add flour mixture and stir just to moisten all flour. Pour into greased 9 x 5 loaf pan (or 2 smaller pans). Bake at 325°F for approximately one hour. Cool in pan for 10 minutes. Remove and finish cooling on rack. Other dried fruits can be added. Serve plain or with whipped cream or hot unsweetened applesauce.
