Date Cake Squares

Ingredients

1 cup chopped dates
3/4 cup chopped pitted prune
1/2 cup dark raisins
1 1/4 cups water
8 tablespoons margarine, cut into pieces
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
5 1/2 teaspoons Equal measure or 18 packets EQUAL sweetener or 3/4 cup EQUAL Spoonful
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup chopped walnuts

Directions:

1. Combine dates, prunes, raisins, and water in medium saucepan heat to boiling. Reduce heat and simmer, uncovered, until fruit is tender and water is absorbed, about 10 minutes. Remove from heat and add margarine, stirring until melted cool.

2. Mix eggs and vanilla into fruit mixture mix in combined flour, EQUAL Measure, baking soda, salt, cinnamon, and nutmeg. Spread batter evenly in greased baking dish, 11 x 7 x 2-inch sprinkle with walnuts.

3. Bake in preheated 350°F oven until cake springs back when touched lightly, 30 to 35 minutes. Cool on wire rack cut into squares.
