3 whole-wheat pita breads (6-inch rounds)
1 tablespoon olive oil or vegetable
1 1/2 cups fresh broccoli florets
3 medium carrots, thinly sliced (about 1 cup)
1 large green pepper, chopped (about 1 cup)
1 green onions, chopped (about 2 Tbsp)
1 cup pizza sauce with Sliced Mushrooms
1 cup shredded mozzarella cheese (4 oz)
1. Split each pita bread into two flat rounds, making 6 rounds. Place on 2 baking sheets.
2. Bake at 400°F for 5 minutes or until toasted.
3. In 10-inch skillet over medium heat, in hot oil, stir-fry vegetables until tender-crisp, stirring often. Set aside.
4. Spread each round with 2 rounded Tbsp pizza sauce; top with vegetables and cheese. Bake 5 minutes or until cheese melts.
