I recently purchased your Cook'n Recipe Software and love it! I have tried several other cookbook programs but found them unsatisfactory.

Chicken Sate

   8 wooden skewers
   3/4 pound skinless, boneless chicken breasts
   Marinade:
   1/4 cup ESTEE Lite maple syrup
   2 tablespoons ketchup
   1 tablespoon lite soy sauce
   1 clove garlic, minced
   1 tablespoon curry powder
   Peanut Sauce:
   2 tablespoons each: balsamic vinegar, low sodium chicken broth, and ESTEEE Peanut Butter
   1 tablespoon each: ESTEE fructose and low-sodium soy sauce
   1 clove garlic, minced
   1/4 cup sliced scallion, divided

1. Soak skewers in water while preparing chicken and sauce. Cut chicken into 16 strips and place in shallow dish. Combine ingredients for marinade; pour over chicken and toss to coat. Refrigerate 1 hour.

2. Meanwhile, prepare Peanut Sauce: In blender or food processor, combine all ingredients for sauce, using half the scallions. Blend until smooth. Pour into small serving dish and sprinkle with remaining scallions. Remove skewers from water. Thread 2 strips of chicken on each skewer.

3. Heat oven to broil or highest setting. Spray broiler rack with nonstick cooking spray. Place skewers on rack and broil 7 to 8 minutes, turning once, until chicken is cooked through. Serve with peanut sauce.
