1 cup water **
4 tablespoons margarine or butter
2 medium carrots, sliced (about 1 cup)
1 small green pepper, chopped (about 1/2 cup)
4 cups PEPPERIDGE FARM Herb seasoned stuffing mix
1 1/2 pounds fresh or thawed frozen firm white fish fillets (cod, haddock or halibut)
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley or 1 tsp dried
1. In medium saucepan mix water, 2 Tbsp margarine, carrots, and pepper. Over medium-high heat, heat to a boil. Remove from heat. Add stuffing. Mix lightly.
2. Spoon stuffing across center of 3-qt shallow baking dish, leaving space on both sides for fish. Arrange fish on each side of stuffing.
3. Melt remaining margarine and mix with lemon juice and parsley. Spoon over fish.
4. Bake at 400°F for 15 minutes or until fish flakes easily when tested with a fork.
