Chicken and Fruit Salad

Here's a use for that chicken you cooked when making chicken stock (see SOUPS). The carrot that cooked with the chicken stock is good in the salad, too.


   2-3 cups cooked chicken, cubed
   1 large peaches or nectarine, sliced
   1/2-1 cup strawberries or reaspberries, sliced
   2 tablespoons walnuts, broken
   1/2 cup low-fat yogurt
   1 tablespoon honey
   1/4 teaspoon fresh ginger, grated
   1 fresh cantaloupe, sliced
   8 leafs Crisp lettuce

1. Combine chicken, peach, strawberries, and walnuts.

2. Stir together yogurt, honey, and ginger.

3. On individual salad plates or on a platter, arrange lettuce leaves and cantaloupe slices

4. Top with chicken mixture

5. Pour yogurt dressing on salad.
