Here's a use for that chicken you cooked when making chicken stock (see SOUPS). The carrot that cooked with the chicken stock is good in the salad, too.


   _ to 3 cups cooked chicken, cubed
   _ large peach or nectarine, sliced
   ___ to 1 cup strawberries or raspberries, sliced
   _ tablespoons walnuts, broken
   ___ cup low-fat yogurt
   _ tablespoon honey
   ___ teaspoon fresh ginger, grated
   _ fresh cantaloupe, sliced
   Crisp lettuce leaves


1. Combine chicken, peach, strawberries, and walnuts.

2. Stir together yogurt, honey, and ginger.

3. On individual salad plates or on a platter, arrange lettuce leaves and cantaloupe slices

4. Top with chicken mixture

5. Pour yogurt dressing on salad.
