Main Dish Spanish Rice

Prep Time: 20 minutes (ready in 1 hour) - Yield: 5 (1-cup) servings


   _ pound ground beef
   _ slices bacon, cut into small pieces
   _ medium onion, thinly sliced
   ___ cup chopped green bell peppers
   ___ cup uncooked regular long-grain white rice
   ___ cup ketchup
   _ (16-ounce) can whole tomatoes, undrained, cut up
   _ (8-ounce) can tomato sauce
   ___ teaspoon salt
   ___ teaspoon pepper
   _ drops hot pepper sauce


1. In large skillet, cook ground beef over medium heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain well. Remove beef from skillet; set aside.

2. In same skillet, cook bacon until crisp. Remove bacon; drain on paper towel, reserving 2 tablespoons drippings in skillet.

3. Add onion and bell pepper to reserved drippings in skillet; cook and stir until crisp-tender. Add cooked ground beef, bacon and all remaining ingredients; mix well. Bring to a boil. Reduce heat to low; cover and simmer 30 to 40 minutes or until rice is tender.
