Fish Filets (1/4-1/2" thick)
_ cup flour
_ teaspoon salt
_ teaspoon pepper
___ cup water
___ cup milk
_ teaspoon vinegar
Mix dry ingredients together in a bowl. Combine liquids, add to bowl slowly, stirring constantly until all lumps dissolve and batter is smooth.
Rinse fillets in cold water, drain, pat dry with paper towels. Heat oil to 370 or 375 degrees. Dip fillets in batter and deep fry 4 to 5 minutes or until golden. Drain on a rack.
