1 medium zucchini (1 1/2 inches in diameter)
1/3 cup fat-free cream cheese or reduced-fat cream cheese (Neufchatel), softened
1/4 cup finely chopped red bell peppers
2 tablespoons chopped fresh parsley
1/2 teaspoon onions and herb seasoning mix or onion powder
2 drops red pepper sauce
Cut zucchini lengthwise into 6 strips. Cut each strip crosswise in half; trim each piece to 2 inches. Mix remaining ingredients. Spoon 2 to 3 teaspoons bell pepper spread on each piece of zucchini.
