Southern-Style Barbecued Ribs |

Prep Time: 30 minutes (ready in 1 hour) - Yield: 4 servings
SAUCE
1/2 cup chopped onions
1/4 cup cider vinegar
1/4 cup lemon juice
2 tablespoons margarine or butter
1 tablespoon sugar
1/2 to 1 teaspoon coarse ground black pepper
1/2 teaspoon salt
1/4 teaspoon dry mustard
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon liquid smoke, if desired
RIBS
1 pound boneless pork loin country-style ribs
1 quart (4 cups) water
1 cup vinegar
1 teaspoon crushed red pepper flakes
1. GRILL DIRECTIONS: In medium saucepan, combine all sauce ingredients; bring to a boil over medium heat. Boil 10 to 12 minutes or until slightly thickened, stirring occasionally.
2. Meanwhile, place ribs in large saucepan; add water, 1 cup vinegar and red pepper flakes. Bring to a boil over medium-high heat. Reduce heat; cover and simmer 30 minutes. Drain.*
3. Heat grill. When ready to grill, brush ribs with sauce. Place on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 20 minutes or until ribs are browned and tender, turning and brushing with sauce once. Heat remaining sauce to a boil and serve with ribs.
TIP:*At this point, ribs and sauce can be refrigerated for up to 24 hours.
To broil ribs, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning and brushing with sauce once.
