_ (1 3/4 to 2-pound) boneless pork roast
___ teaspoon salt
___ teaspoon pepper
_ large sweet potatoes, peeled, thinly sliced
_ medium onion, sliced, separated into rings
___ teaspoon dried thyme leaves
_ quart (4 cups) apple juice
1. Sprinkle pork roast with salt and pepper; place in 3 1/2 or 4-quart slow cooker. Place sliced sweet potatoes around and on top of roast. Top with onion; sprinkle with thyme. Pour apple juice over onion.
2. Cover; cook on low setting for at least 8 hours or until pork is no longer pink in center and sweet potatoes are tender.
