Fiesta Rice

Ingredients

1 cup low-fat shredded Cheddar cheese or Farmer's cheese, divided
2 1/2 cups cooked brown rice
3/4 cup low-fat cottage cheese
1 (2-ounce) jar pimientos, drained and chopped
1/2 cup fat-free milk
1 large tomato, peeled and diced
dash paprika

Directions:

1. Preheat oven to 350°F.

2. Combine 1/2 cup of cheddar cheese and all other ingredients except paprika. Stir until well mixed.

3. Spray casserole with nonstick cooking spray.

4. Pour in mixture top with remaining cheddar cheese and sprinkle well with paprika.

5. Bake 25-30 minutes.
