Pizza Muffins

Serving size: 2 muffins


   1 egg
   1/4 cup tomato sauce
   1 cup low-fat buttermilk or low-fat plain yogurt
   1 teaspoon oregano
   1/4 teaspoon garlic powder
   1/4 teaspoon freshly ground pepper
   1/4 cup shredded part-skim mozzarella cheese, divided
   1 1/4 cups whole wheat flour
   3 tablespoons wheat germ
   2 teaspoons baking powder
   1 teaspoon baking soda
   2 sliced Roma tomatoes
   1 tablespoon sesame seeds


Method

1. Preheat oven to 400 degrees. Spray muffin tin with cooking spray or line with baking cups.

2. Blend egg, tomato sauce, and buttermilk with a mixer or food processor. Add spices. Add 1/4 cup cheese, reserving remainder for topping.

3. In another bowl, mix flour, wheat germ, baking powder, and baking soda.

4. Combine the two mixtures until flour is no longer visible.
