1. Preheat oven to 400°F. Spray muffin tin with cooking spray or line with baking cups.
2. Blend egg, tomato sauce, and buttermilk with a mixer or food processor. Add spices. Add 1/4 cup cheese, reserving remainder for topping.
3. In another bowl, mix flour, wheat germ, baking powder, and baking soda.
4. Combine the two mixtures until flour is no longer visible. Spoon batter into muffin tin, filling each well about two-thirds full. Top each muffin with a slice of tomato and some cheese sprinkle with sesame seeds.
5. Bake 20-25 minutes.
