Whole-Wheat Pizza

Ingredients

1 cup warm water (110-115°F)
1 package (or 1 Tbsp) active dry yeast or 1 cake yeast
1 tablespoon honey
2 cups whole wheat flour
1/2 teaspoon salt
1 tablespoon canola oil
4 ounces shredded reduced-fat Cheddar cheese
fresh ground pepper
1/2 cup unbleached white flour
1/2 cup water (if necessary)
1/4 teaspoon garlic powder
1 tablespoon cornmeal
1/2 cup tomato sauce or pizza
1 tablespoon oregano
1 cup chopped broccoli
1 cup sliced mushrooms
1/2 cup shredded part-skim mozzarella cheese

Directions:

1. Combine water, yeast, honey, and 1 cup of whole-wheat flour in a large bowl. Beat 5 minutes until mixture is smooth. Let rise in a warm place for 15 minutes.

2. Add salt, oil, cheddar cheese, pepper, white flour, water (if needed), garlic powder, and remaining whole-wheat flour to the dough.

3. Mix well and let the dough rest for 5 minutes.

4. Preheat oven to 400°F. Pat out dough onto a baking sheet dusted with cornmeal, building up sides to form a crust.

5. Top with the pizza sauce, oregano, vegetables, and mozzarella. Bake for 15-20 minutes.
