Whole-Wheat Pizza

Serving size: 1 slice


   1 cup warm water (110-115 degrees)
   1 package (or 1 Tbsp) active dry yeast or 1 cake yeast
   1 tablespoon honey
   2 cups whole wheat flour
   1/4 teaspoon salt
   1 tablespoon canola oil
   4 ounces shredded reduced-fat cheddar cheese
   1/4 teaspoon Fresh ground pepper
   1/4 cup unbleached white flour
   1/4 cup water (if necessary)
   1/4 teaspoon garlic powder
   1 tablespoon cornmeal
   1/4 cup tomato sauce or pizza
   1 tablespoon oregano
   1 cup chopped broccoli
   1 cup sliced mushrooms
   1/4 cup shredded part-skim mozzarella cheese


Method

1. Combine water, yeast, honey, and 1 cup of whole-wheat flour in a large bowl. Beat 5 minutes until mixture is smooth. Let rise in a warm place for 15 minutes.

2. Add salt, oil, cheddar cheese, pepper, white flour, water (if needed), garlic powder, and remaining whole-wheat flour to the dough.

3. Mix well and let the dough rest for 5 minutes.

4. Preheat oven to 400 degrees. Pat out dough onto a baking sheet dusted with cornmeal, building up sides to form a crust.
