Turkey-Squash Casserole

Ingredients

2 tablespoons margarine
1 medium onion, chopped
1 1/2 pounds yellow squash, sliced
1 cup shredded carrot
3 cups Pepperidge Farm stuffing mix
1 cup fat-free sour cream
1 egg
1 cup fat-free reduced-sodium chicken broth or enough to moisten
12 ounces skinless turkeys breast, cubed

Directions:

1. Preheat oven to 375°F.

2. Sauté onion in margarine. Mix with remaining ingredients.

4. Pour into 2-qt baking dish coated with nonstick cooking spray.

5. Bake 30-40 minutes or until bubbly.
