Spice Up That Pork - Mexican Seasoning Mix

These high-flavored seasoning mixes will spice up your next pork dinner. You may want to go to a food co-op to purchase the spices in small amounts.
Use about 1/4 cup seasoning mix for a 4-pound roast or 4 pounds of spareribs. Before roasting, brush the roast or spareribs with about 2 tablespoons vegetable oil and rub with the seasoning mix. You also may want to sprinkle seasoning mix on pork chops or tenderloin before cooking.
For each seasoning mix, stir all the ingredients together in an airtight storage container. Store in a cool, dry place for up to six months. Shake or stir to combine before each use. Makes about 1/2 cup mix.


   ___ cup ground red chili or chili powder
   _ tablespoons dried oregano leaves
   _ tablespoon ground cumin
   _ teaspoons ground coriander
   ___ teaspoon salt
