Sweet Potatoes and Bananas |

2 pounds sweet potatoes or yams, cooked and peeled
3 bananas, peeled and sliced
1/2 cup orange juice, unsweetened
4 packets artificial sweetener (equal to 8 teaspoons sugar)
1/2 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
I had this at my friend Bette Mazur's house. I took out the butter and sugar, and it's still great.
1. Preheat oven to 375ºF.
2. Slice potatoes. Toss bananas with ¼ cup orange juice.
3. In 2-quart baking dish, layer half the potatoes, then 2/3 of the sliced bananas. Mix the sweetener, cinnamon, and nutmeg and sprinkle half over the potatoes and bananas. Pour in any juice left over from tossing the bananas. Layer remaining potatoes; end with remaining bananas in the center. Pour remaining orange juice over and sprinkle with sweetener mixture.
4. Bake for 45 minutes, until bubbly.
