4 loin lamb chops (3/4-inch-thick), lean, trimmed of fat
1 lemon (juice of 1 lemon)
1 tablespoon mint leaves, dried, crushed
1/8 teaspoon cinnamon, ground
1/8 teaspoon nutmeg, ground
Fresh mint sprigs (optional)
Try serving this with a whole grain side dish like bulgur of kasha (buckwheat groats).
Sprinkle chops with lemon juice and seasonings; puncture repeatedly with a fork. Wrap in plastic; refrigerate several hours. Broil or grill chops, turning once, until brown and crisp outside but still pink in the middle of until done as desired. Garnish with fresh mint sprigs, if desired.
