1 16-ounce bag frozen green beans, defrosted or 1 pound fresh, trimmed
1 6-ounce can tomato juice
1/2 onion (small) minced
1 teaspoon oregano leaves
1/4 teaspoon black pepper, freshly ground
1 tablespoon parmesan cheese, grated
I love green beans raw, and my boys will sometimes eat them with dip. You can steam them for 5 minutes (they should still be bright green) or try this easy recipe.
Combine all ingredients except cheese in a saucepan. Simmer, covered, for 3 minutes. Uncover and simmer until liquid is almost gone. Sprinkle with cheese.
