Village Luncheon Salad

Ingredients

1 head lettuce Bibb or Boston
1 chicken breast cooked, skinned and cut into strips
4 slices Swiss cheese cut into strips
8 slices salami cotto salami
2 oranges peeled and sectioned
1 avocado large or 2 small avocados, sliced
Pitted ripe olives
Cumin Dressing (see below)
tortilla chip
Cumin Dressing:
1/4 cup whipped cream whipped
1/4 cup mayonnaise commercial or Basic
2 tablespoons chili sauce
1 tablespoon lemon juice fresh
1/2 teaspoon cumin ground
1/8 teaspoon dry mustard
1/8 teaspoon garlic salt

Directions:

* Blend whipped cream, mayonnaise, chili sauce, lemon juice, cumin, mustard and garlic salt chill. Arrange lettuce on individual plates finely chop a few inner leaves and put in center of each. Divide chicken, cheese, salami or ham, oranges, avocado and olives on plates. Cover and chill. To serve spoon a portion of dressing over each serving and garnish with tortilla chips.
