1 16-ounce container cottage cheese
1 tablespoon mayonnaise commercial or Basic
1/2 teaspoon curry powder to taste
1 13-ounce can crushed pineapple drained
1/3 cup almonds toasted slivered or chopped pecans
Lettuce leaves
Fresh fruit of your choice
Combine cottage cheese, mayonnaise and curry powder; blend well. Stir in pineapple and nuts. Cover and refrigerate at least 1 hour. Place lettuce on individual plates, add a scoop of cottage cheese mixture and a variety of fresh fruits.
