2 pounds potatoes new, cooked, peeled and cut into strips
1 cup celery thinly sliced hearts
4 ounces ham cooked, cut into strips
2 tablespoons shallots minced or green onion
2 tablespoons parsley minced fresh
2 tablespoons capers minced
2 tablespoons white wine vinegar
1 tablespoon lemon juice fresh
Salt and freshly ground pepper to taste
1/2 cup whipped cream
Lettuce leaves
1/4 cup olives chopped
Combine potatoes, celery and ham in a bowl and toss lightly; stir in shallots or green onion, parsley and capers. Blend vinegar and lemon juice; sprinkle over potato mixture, tossing lightly. Sprinkle with salt and pepper to taste. Add cream to moisten and toss salad again. Spoon immediately onto lettuce and garnish with olives.
