1/4 cup green onions sliced (optional)
4 teaspoons parsley minced fresh (optional)
3 eggs hard-cooked, chopped
3 tablespoons red wine vinegar
1 tablespoon dijon style mustard or to taste
1/2 cup olive oil plus 1 tablespoon
Salt and freshly ground pepper to taste
