1/3 cup mayonnaise commercial or Basic
1/4 cup whipped cream whipped
1 tablespoon lemon juice fresh
Ground nutmeg and ground mace to taste
3 pears fresh, halved and sprinkled with 1 tablespoon
2 cups chicken cubed cooked
Salt and freshly ground pepper to taste
1 1/2 cups celery sliced
Lettuce leaves
1/2 cup almonds toasted slivered
Blend mayonnaise, whipped cream and 1 tablespoon lemon juice in a small bowl. Season to taste with nutmeg and mace. Chop three of the pear halves, reserving the nicest ones for the garnish. Sprinkle chicken with salt and pepper; blend into dressing with chopped pears and celery. Chill. Serve on lettuce; garnish with remaining pears cut into wedges and sprinkle with almonds.
