1 10-ounce package vermicelli coiled
1 bunch green onions including tops, sliced
5 eggs hard-cooked, coarsely chopped
2 4 1/2-ounce cans shrimp medium shrimp, well drained, or 8 ounces cooked fresh shrimp
1 2/3 cups mayonnaise commercial or Basic
1/2 cup half and half
2 tablespoons lemon juice fresh
Salt and freshly ground pepper to taste
Break up coils of vermicelli; cook according to package instructions. Rinse with cold water, drain well and place in a large bowl. Stir in remaining ingredients. Let chill 4 hours or longer.
