3 cups chicken breasts diced cooked
1 cup pineapple tidbits or chunks, cut in half and drained
1 1/2 cups celery diced
1 teaspoon salt
1/8 teaspoon black pepper freshly ground
3 tablespoons ginger slivered candied
2/3 cup sour cream
1/2 teaspoon honey (optional)
Watercress or romaine, torn into small pieces
Combine chicken, pineapple, celery, salt and pepper. Cover and chill for 2 hours. Just before serving, combine 2 tablespoons ginger, sour cream and optional honey. Stir dressing into chicken mixture. Mound on watercress or romaine. Sprinkle remaining ginger on top of chicken mixture.
