There's been a standing joke in my family for years that my mother really is Betty Crocker in disguise! My mom doesn't just enjoy cooking and baking; to her there are few pleasures in life more wonderful than having family and friends together to delight in one of her feasts.
Some of my favorite memories of my youth involve the hours my mother spent teaching my friends and me to bake. Before the Christmas season, we would bake breads, cookies, and coffee cakes and make candies, all the while singing round after round of Christmas carols.
Mom's love of cooking, coupled with her strong desire to help the underprivileged, led her to the Nutri Net Agency in Independence, Missouri. There my mom became certified to teach balanced food preparation to low-income families and single parents. Since her certification, she has taught food preparation to single mothers at Joliet (Illinois) Junior College, children through the Salvation Army programs, and assisted in a course for low-income families in Bolingbrook, Illinois.
In addition to being an elder in our church, she has served as the pastor for the past five years. My mom has held elected positions at the district level and has participated in the World Conference as a delegate for many years.
Although she works forty hours a week and spends many, many more in her community service projects, she always has time to give to her family and friends. My mom is also a wonderful role model to me as a wife. Married thirty-one years, my mom and dad believe it's important to have time off just for themselves. This past summer, my parents traveled on their Goldwing motorcycle from the Atlantic coast to the Pacific.
I'd like to say just how very proud I am of my mother. She will always be a winner to me. I am thankful for having had this opportunity to say, "I am proud of you, and I thank God for blessing me with a mother like you."
