Shrimp Fajitas ..........Click the Edit tab and select this entry to open the recipe.
Kathie is thirty-one years old and works as a case manager at the Center for Comprehensive Services (CCS) in Carbondale, Illinois. CCS is an adult residential rehabilitation facility for persons with traumatic brain injuries (TBI). From her job title alone, you must know that this is a person with tremendous compassion, patience, and intelligence. When working with clients with TBI, one must always prepare several possible means to an end as well as be a creative problem solver. She always approaches tasks with an open mind and sense of humor.
Her mother passed away when she was just a child. As a result, when Kathie and her two brothers were old enough, they were responsible for preparing the family meals. Kathie got to start cooking regularly at age nine. Now that Kathie has been practicing for many years, she is always at the top of the guest list for potluck dinner parties. Kathie typically brings ten to twelve dishes to potluck dinners. Let there be no doubt that Kathie loves cooking and baking, and she is very good at it!
I have never met anyone that is more dedicated to family and friends than Kathie. She is a person that you can always depend on for help or guidance no matter how large or small your problem. When Kathie was twenty-six years old, she moved home to Chicago from Colorado when her father was diagnosed with a terminal illness. She took care of him and their household while working full-time.
Kathie has been recognized as an "Unsung Hero" by a local television station for her volunteer work with Southern Illinois Regional Effort for AIDS (SIREA). She wrote a grant indicating the need for assistance with AIDS-related problems in the southern Illinois region and secured approximately $120,000 in funds from the Ryan White Consortium. Kathie also is very much involved in reintegrating TBI clients back into the community. She continuously works toward promoting head injury prevention and public acceptance of the TBI population and persons with disabilities. Kathie also volunteers periodically for several organizations such as serving Thanksgiving dinner to the needy at her church.
