Twenty-seven years ago, I received my first Betty Crocker cookbook as a bridal shower gift from my mother. In the late 1960s, women strived to acquire Betty's ability of preparing bountiful meals for husbands and family.
Just as Betty's image changed over the years, so did mine. I went from "Susie Homemaker" to "Working Single-Again Mom of Three." That's when I learned to master the art of Betty's ready-made brownie mixes. My motto was "God so loved single parents that He gave us Betty Crocker quick fixes and microwave ovens."
I was able to juggle a demanding career in business, three kids (two of which are twin sons), PTA meetings, Little League games, ballet lessons, car pools, and a host of community service organization positions. My kids never hesitated volunteering me for classroom cookies or brownies because Betty and I were the super women who could whip up these things in the twilight hours.
Although the kids are off to college, a week doesn't go by that I don't whip up a batch of Betty's Snickerdoodles to send to my sons or take the time to show my daughter how to make yummy treats.
I have been a great mother, hardworking woman, community service leader, dedicated friend, accomplished cook, and a true example of a woman who learned how to roll with the punches about as good as she could roll pie dough. Betty has been a part of my life over the years, and now I would like to be a part of hers.
