The seventeenth of May, 1984 was very cold when Carmelina Chan Cockrell arrived in this country from the steamy, bustling Philippine city of Cebu. As a newcomer, she experienced great difficulty in finding financial and banking work similar to her prior Philippine employment. Instead, she volunteered as a cook for the Catholic Church's community service program to assist the underprivileged.
She looked forward to Wednesday afternoons when she walked six blocks to the church where meals were cooked. Many of her childhood memories were made in the kitchen of her father. He was frequently requested by the Chinese community to cook during special occasions, and Carmelina was selected by her father to assist him with preparation and cooking. When Carmelina came to this country, she learned to use local ingredients for her Chinese dishes.
About seven years ago, Carmelina became a United States citizen and began working as a financial analyst in a government department. Each day she meets various challenges of budgets, paperwork, and politics in order to complete her projects. Also, she is a volunteer member of several committees dedicated to operating a local credit union more efficiently.
But not all of her time is spent on financial affairs. She still finds time to exercise her skills as a cook. Carmelina's favorite recipe is Honey-Wheat Bread featured in Betty Crocker's Step-by-Step Cookbook. She likes to treat her co-workers to Light-Cornmeal Crescents (a Betty Crocker recipe) and her special Hum Bao (Dim Sum). Prior to my sister-in-law's death, her diet was highly restricted; nevertheless, she requested Carmelina's Hum Bao because they were her favorite treat.
