1 egg, slightly beaten
1/4 cup milk
1/2 cup all-purpose flour, or cornmeal
1 pound fish filets
1/4 cup oil or shortening
1. In shallow dish, combine egg and milk; blend well. Place flour in another shallow dish. Dip fish in egg mixture; coat with flour.
2. Heat oil in large skillet over medium-high heat. Add fish; cook 5 to 7 minutes or until golden brown and fish flakes easily with fork, turning once during cooking. If desired, season with salt and pepper to taste.
