Fried Oysters |

Prep Time: 25 minutes - Yield: 4 servings
1/3 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
1 egg
1 tablespoon water
2/3 cup cracker crumbs or unseasoned dry bread crumbs
1/4 cup oil or butter
1 pint (2 cups) fresh oysters, drained
1. In shallow dish, combine flour, salt and pepper. In another shallow dish, combine egg and water; beat well. Place crumbs in medium bowl.
2. Heat oil in medium skillet over medium-high heat until hot. Coat oysters with flour mixture; dip in egg mixture. Coat with crumbs. Add oysters to pan; cook 8 to 10 minutes or until golden brown, turning once. If desired, serve with lemon wedges or Tartar Sauce, page 192.
TIP: Oysters can be cooked in deep fryer at 375°F. for 2 to 3 minutes.

Variations
Fried Clams: Substitute fresh clams, shells removed, for oysters.
Fried Frog Legs: Substitute 3 lb. frog legs for oysters. Cook about 10 minutes on each side or until golden brown. If legs are large, add a little water. Cover; simmer 10 minutes. Remove cover; continue frying until crisp.
