Tamale Pie

Ingredients

3/4 pound lean ground beef
1/4 cup chopped green pepper
1/4 cup chopped onion
1/2 teaspoon Mexican Seasoning
1 cup canned diced tomato, drained (reserve 1 1/2 Tbsp juice)
3/4 cup frozen corn
4 tablespoons green chilies
1 package corn bread mix
paprika

Directions:

1. Sauté meat, peppers, onions, and seasoning together.

2. Add remaining ingredients except corn bread mix and paprika and simmer until well heated and flavors blend, about 30 minutes. Stir occasionally.

3. Preheat oven to 375°F. Place filling mixture in an 8-inch-square baking pan coated with nonstick cooking spray.

4. Prepare corn bread batter according to package instructions, then divide 1 cup batter into 4 equal portions. Spoon each portion about 2 inches apart over the warm meat mixture.

5. Bake for 30-40 minutes or until corn bread is done. Sprinkle top with paprika, and serve.
