Sally Lunn Peach Cake

Ingredients

2 cups sifted flour
3 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
3/4 cup fat-free milk or low-fat milk (1%)
1/2 cup canola oil
1/4 cup sugar
4 cups fresh or juice-packed peaches, drained

Directions:

1. Preheat oven to 375°F.

2. Sift flour with baking powder and salt.

3. Combine egg, milk, and oil in a large bowl. Add sugar. Stir in dry ingredients. Do not overmix.

4. Pour batter into a loaf pan that has been coated with cooking spray.

5. Bake for 30 minutes.

6. Top each slice with 1/3 cup sliced peaches.
