Variations: Other fruits such as pears, peaches, rhubarb or berries can be substituted for apples; add raisins to fruit; add nuts to topping; serve with a dollop of low-fat plain yogurt sweetened with honey, rosewater, nutmeg, artificial sweetener or maple syrup; or serve with on e of the creamy fruit sauces in this section.
1 large apple, sliced
2 teaspoons lemon juice
2 teaspoons reduced-calorie margarine
1/2 cup quick-cooking rolled oats
1 1/2 packages artificial sweetener (not aspartame)
1/4 teaspoon cinnamon
1. Divide apple slices equally between two 6-oz. custard cups. Sprinkle each with lemon juice.
2. Microwave margarine in a small dish 15-20 seconds on HIGH or until softened.
3. Mix in oats, brown sugar and cinnamon. Spoon evenly over apples.
4. Microwave both dishes 2-3 minutes on HIGH or until apples are tender. Serve warm.
