Noodle Pudding

Ingredients

1 egg
1/2 tablespoon sugar
dash nutmeg
1/8 teaspoon cinnamon
1 1/4 cups broad noodles, cooked
1/2 tablespoon canola oil
1/2 cup apple juice
1/4 cup raisins
1 tablespoon chopped pecan

Directions:

1. Preheat oven to 350°F.

2. Beat egg and sugar until fluffy. Add remaining ingredients except nuts.

3. Pour into 8-inch baking pan that has been sprayed with nonstick cooking spray. Sprinkle in nuts.

4. Bake for 40 minutes or until browned.
