Black Bean Cakes

Ingredients

1 1/4 cups cooked black beans
1/2 cup chopped onion
1/2 cup chopped fresh cilantro or parsley
2 tablespoons Korean chili-garlic paste or plain tomato paste
1 egg, lightly beaten
2 tablespoons fat-free milk or low-fat milk (1%)
salt and pepper to taste
1/4 cup dry bread crumbs
2 tablespoons olive oil

Directions:

1. Thoroughly mix all ingredients except bread crumbs and olive oil. Add bread crumbs to mixture and form into 4 patties.

2. Heat oil in skillet and gently slide patties into skillet. Sauté until brown and crisp on both sides.
