Fiesta Chicken Soup

Ingredients

Vegetable cooking spray
1 pound boneless, skinless chicken breast half, cut into cubes
1 large green bell pepper and/or red bell pepper, coarsely chopped (about 1 cup)
2 teaspoons chili powder
1 teaspoon garlic powder
2 (14 1/2-ounce) cans SWANSON NATURAL GOODNESS chicken broth
1 (10-ounce) package frozen whole kernel corn (about 1 3/4 cups)
1 cup cooked rice, cooked without salt
1 teaspoon chopped fresh cilantro or parsley (optional)
1 lime, cut into 5 wedges

Directions:

1. Spray large saucepan with cooking spray and heat over medium heat 1 minute. Add chicken, pepper, chili powder, and garlic powder and cook 5 minutes, stirring often.

2. Add broth, corn, and rice. Heat to a boil. Reduce heat to low. Cook 10 minutes or until chicken is no longer pink. Stir in cilantro. Serve with lime wedges. If desired, garnish with additional fresh cilantro.
