Vegetable Rice Pilaf

Ingredients

Vegetable cooking spray
3/4 cup uncooked regular long grain rice
1 (14 1/2-ounce) can SWANSON vegetable broth
1/4 teaspoon dried basil leaves, crushed
3/4 cup frozen mixed vegetables, without corn, peas or pasta
1/4 cup chopped red bell pepper or green bell peppers

Directions:

1. Spray medium saucepan with cooking spray and heat over medium heat 1 minute. Add rice and cook 30 seconds, stirring constantly. Stir in broth and basil. Heat to a boil. Reduce heat to low. Cover and cook 10 minutes.

2. Stir in vegetables and pepper. Cover and cook 10 minutes more or until rice is done and most of liquid is absorbed. If desired, garnish with fresh chives.
