Oven-Tender Swiss Steak

Serves: 6

   2 pounds beef round steaks, 1-inch thick
   Vegetable oil
   1 cup water
   Salt and pepper
   1 onion, chopped
   1 cup celery, diced
   1 green bell peppers, diced
   1 cup tomato juice


Cut meat into serving size pieces. Season with salt and pepper. Heat oil in cooker. Add meat and brown evenly on all sides. Add remaining ingredients. Lock lid and bring to full pressure. Lower heat, maintaining pressure, and cook for 15 minutes. Let pressure drop naturally. Thicken sauce as desired. Serve over hot cooked rice, pasta, or mashed potatoes.
