_ cup white or brown rice, cooked according to package directions
Cooking spray
_ pound boneless skinless chicken breast halves
_ large onions, cut into thin wedges
_-1/4 cups water
_ cloves garlic, chopped
_ teaspoon peanut oil
_ tablespoon soy sauce
_ teaspoon chili powder
_ teaspoon curry powder
___ teaspoon ground turmeric
_ teaspoon ground ginger
_ tablespoons snipped fresh parsley
Coat a nonstick skillet with cooking spray and heat. Add chicken and onions. Saute until chicken is lightly browned, about 5 minutes. Transfer to pressure cooker. Add remaining ingredients, except parsley. Lock lid and bring to full pressure. Reduce heat, maintaining pressure, and cook for 4 minutes. Let pressure drop naturally for 4 minutes; quick-release any remaining pressure. Stir in snipped fresh parsley and serve over hot, cooked rice.
