1 cup sugar
1/2 cup light corn syrup
1 cup roasted salted peanuts
1 teaspoon margarine or butter
1 teaspoon vanilla extract
1 teaspoon baking soda
1. microwave directions: Butter cookie sheet. In 1 1/2-quart microwave-safe casserole, combine sugar and corn syrup; mix well. Microwave on high for 4 minutes.
2. Stir in peanuts. Microwave on high for 3 to 5 minutes or until light brown.
3. Stir in margarine and vanilla; blend well. Microwave on high for 1 to 2 minutes. (Peanuts should be lightly browned.)
4. Add baking soda; stir gently until light and foamy. Pour onto buttered cookie sheet. Cool 30 minutes. Break into pieces.
