2/3 cup firmly packed brown sugar
1/3 cup sugar
1 cup butter, softened
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon ginger
1/2 teaspoon salt
1 (2-ounce) jar (1/3 cup) finely chopped crystallized ginger
1/3 cup sugar
1. Heat oven to 350°F. In medium bowl, combine brown sugar, 1/3 cup sugar and butter; beat until light and fluffy. Add vanilla; blend well.
2. Add flour, ginger and salt; mix well. Stir in crystallized ginger. Shape dough into 1-inch balls; roll in 1/3 cup sugar. Place 2 inches apart on ungreased cookie sheets. Flatten with bottom of glass dipped in sugar.
3. Bake at 350°F. for 7 to 10 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheets.
High Altitude (above 3500 feet): Decrease brown sugar to 1/2 cup; increase flour to 2 1/4 cups. Bake as directed above.
