We like to double the recipe and just roll up the leftovers in tortillas...tomorrow's dinner is ready!
4 boneless, skinless chicken breasts
1 (16-ounce) jar picante sauce
1 (15 1/2-ounce) can black beans, drained and rinsed
4 slices American cheese
2 1/4 cups prepared rice
Place chicken in the bottom of a slow cooker; add picante sauce. Spread black beans over the top; heat on low setting for 6 to 8 hours or until juices run clear when chicken is pierced with a fork. Top with cheese slices; cover and heat until melted. Spoon over rice to serve.
