Low-Fat! Prep: 20 min; Chill: 1 hr
Chilies contain oils that will irritate your skin if you rub your face or eyes after touching chilies. Wearing plastic gloves, or putting your hands in plastic bags, prevents the oils from transferring onto your skin. After chopping chilies, wash hands, especially under your nails, and utensils in soapy water.
Serve with tortilla chips, crackers, vegetables, fish, chicken or eggs.
_ large tomatoes, seeded and chopped (3 cups)
_ small green bell peppers, chopped (1/2 cup)
_ medium green onions, sliced (1/2 cup)
_ cloves garlic, finely chopped
_ tablespoons chopped fresh cilantro
_ tablespoon finely chopped seeded jalapeno chiles
_ to 3 tablespoons lime juice
___ teaspoon salt
Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 1 hour to blend flavors but no longer than 1 week.
