Everyone is familiar with the Big Three--ketchup, mustard and salsa--but the condiment family is much larger. Other members include relishes, steak sauce, chutneys, jams, jellies and spreads as delicious serve-yourself accompaniments that add zest to everyday foods. Some of the most popular condiments are:

- Salsa: In Mexico, the word means "sauce," and salsa has taken cooking by storm. It isn’t just for tortilla chips anymore. Fruit salsas, made from pineapple, peaches, apricots, raspberries and more, are fabulous paired with grilled and roasted meat and poultry. Look for cooked as well as fresh versions in this cookbook, such as Tomato Salsa (below).
- Chutney: Like salsa, chutney hails from a different culture, in this case India. This chunky, spicy, cooked condiment usually contains fruit, vinegar, sugar and spices. Serve chutneys, such as Golden Fruit Chutney, with curried dishes and grilled meats, as a spread for bread and as a partner to cheese.
- Relish: Relishes are undergoing a renaissance! Fresh or cooked, relishes are made up of small pieces of fruits or vegetables. They’re also colorful complements to meats, poultry, fish and sandwiches.

Make condiments head of time, then serve them right from the refrigerator or at room temperature, depending on the ingredients. Your supermarket is a mecca for a fabulous array of already-prepared condiments. Look for them in the condiment and international food sections as well as in the refrigerator and freezer cases.
