Directions:

Seeds are little kernels of seasoning that you can sprinkle on top of dishes or mix into the food to give flavor,
texture and eye appeal.

Seed and Form Flavor Use
Anise seed (whole) Tastes like black licorice Baked goods, candy, sweetened warm
milk

Caraway seed (whole) Tangy, strongly fragrant and a little Cabbage, cheese, dumplings, meats,
smoky reminiscent of caraway rye pickling, rye bread, sauerkraut, soups,
bread stews

Cardamom (whole pod, Strongly fragrant with a slight lemony- Coffee, curry, custard, fruits,
seeds, ground) sweet flavor and a touch of pepper and Scandinavian breads, sausages
ginger reminiscent of Swedish cardamom
bread

Celery seed (whole, ground) Slightly bitter, like really strong celery Meats, pickling, salads, sauces, soups,
stuffings, tomato juice-based drinks

Coriander (whole, ground) Mildly fragrant, a cross between lemon Curry powder, marinades, Mexican
peel and caraway, like curry powder and Spanish dishes, pastries, pickling,
sausages, seafood

Cumin (whole, ground) Strongly fragrant and slightly smoky, Cheese, chili, chili powder, curry pow-
reminiscent of Mexican food der, pickling, pork, sauerkraut

Dill seed (whole, ground) Tangy tastes like dill pickles Fish, meats, pickling, processed meats,
salads, sauces, soups

Fennel seed (whole, ground) Sweet with a delicate black licorice flavor Breads, eggs, fish, Italian dishes,
sauces, sausages, soups, sweet pickles

Fenugreek seed (whole) Pleasantly bitter and slightly sweet Chutneys, curry powder

Mustard seed (whole, ground) Hot, strongly fragrant with dusty Casseroles, Chinese dishes, meats,
aftertaste reminiscent of yellow or pickling, relishes, salads, vegetables
Dijon mustard

Poppy seed (whole) Sweet and nutty, very crunchy Noodles, salad dressings, breads,
reminiscent of poppy seed muffins cakes, cookies, cabbage, carrots

Sesame seed (whole) Oily with a nutty, slightly sweet flavor Breads, dips, salad dressings, poultry,
reminiscent of hummus, hamburger buns seafood
and breadsticks
